- 2 c. cooked vegetables (carrots, broccoli, celery, cauliflower, onion)
- 6 potatoes
- 1 onion
- 3/4 c. potato water
- 1/4 c. milk
- 1 Tbsp. butter
- 1 Tbsp. flour
- grated Mozzarella cheese
- 2 egg yolks
Directions

1Cook 6 potatoes in water with 1 onion and reserve at least 3/4 cup water when potatoes cooked.

2Mash potatoes with 2 egg yolks and cooked onion.

3Take 3/4 of mixture and line bottom of casserole dish.

4Place cooked vegetables on top of potatoes.

5Cook together 3/4 cup potato water, milk, butter and flour to boiling until thickened and pour over vegetables.

6Place remaining potatoes over this mixture and sprinkle top with shredded cheese. Bake at 350° for 30 minutes.
