  • 3 eggs
  • 1 1/3 c. sugar
  • 1 tsp. vanilla
  • 1 c. cool, mashed potatoes
  • 4 c. flour
  • 2 Tbsp. oil
  • 6 tsp. baking powder
  • 2 tsp. nutmeg
  • 1 tsp. salt
  • 1/2 c. milk

    Beat eggs with sugar and vanilla until light.

    Add potatoes and oil.

    Sift dry ingredients.

    Add alternately with milk to potato mixture, beating well.

    Chill dough 3 hours.

    Fry in deep, hot fat (375°) for 1 minute on each side.

    Drain.

    Dip in sugar. Makes about 2 to 2 1/2 dozen.
