- 4 medium size potatoes
- 2 c. flour
- 2 eggs
- 1 tsp. salt
- 1 1/2 lb. broccoli
- 1/4 lb. creamy Bleu cheese
- 1/4 c. heavy or whipping cream
- 2 tsp. unsalted butter
- 1 small clove garlic, minced
- 1/2 c. roughly chopped walnuts
- 1/4 tsp. freshly ground black pepper
Directions

1Cut the broccoli tops into flowerets.

2Cut off the top 3-inches of the stems.

3Peel them and cut them into thin strips, about 1 1/2-inches long.

4Cook flowerets and stems, covered, in 3 inches boiling salted water until just barely tender, 4 to 5 minutes. Drain.
