- 2 3/4 lb. potatoes
- 3 level tsp. salt
- 9 oz. cornstarch
- 1/2 pt. milk
- 1 level tsp. baking powder
- 1 stale roll or slice bread
- butter or margarine
- bacon
Directions

1Wash potatoes and boil well until done.

2Skin at once.

3Mash 2 1/4 pounds.

4Add salt, cornstarch and boiling milk.

5Dough will be soft at first but will become firmer as it cools.

6Dice, roll and fry until golden brown.

7With floured hands, shape the potato dough into dumplings.

8Press into each ball a few croutons.

9Drop into boiling salted water.

10Simmer until done.

11Cooking time is 20 to 25 minutes.
