- 6 medium-sized potatoes
- 3 eggs
- 2 Tbsp. flour
- buttered crumbs
Directions

1Boil potatoes and let stand for a few hours or overnight, still in their jackets.

2Peel potatoes and mash them or put through a ricer, then add the eggs and flour.

3Roll the mixture into little balls.

4Chill in refrigerator for about an hour before cooking.

5Cook in lightly salted water that is just under the boiling point.

6When dumplings are done, will rise to top.

7Serve hot with melted brown butter and crumbs.
