Potato Dumplings

  • 1/2 c. instant mashed potatoes, mixed with only water and salt
  • 4 eggs or Egg Beaters
  • 1/2 tsp. salt
  • 1 1/2 c. flour

Directions

    Mix instant potatoes with water and salt.

    Blend eggs into cooled potatoes.
  3. 3
    Slowly add the flour.

    Dip a tablespoon into salted, boiling water to get it hot.
  5. 5
    Use hot spoon to chop off a 1/2 tablespoon of dough and drop it into the hot water.

    Keep doing this until all dough is used up.

    Let the dumplings boil until all are expanded and look spongy and are floating.

    Take out with slotted spoon and toss with butter.

    Use in soups, stews, casseroles, etc.
