- 9 medium potatoes
- 1 tsp. salt
- 3 eggs, well beaten
- 1 c. sifted flour
- 2/3 c. bread crumbs or farina
- 1/2 tsp. nutmeg
Directions

1Boil potatoes in their jackets until soft.

2Remove skins and press potatoes through a ricer.

3Add salt, eggs, flour, 2/3 cup bread crumbs and nutmeg.

4Mix thoroughly.

5Form mixture into dry balls about the size of walnuts (if mixture is too moist, add more bread crumbs).

6Drop balls into boiling, salted water.
-
7When balls come to the surface, boil, uncovered, for 3 minutes.

8Remove one from liquid and cut open.

9If center is dry, they are sufficiently cooked.

10Remove balls from liquid.
-
11Serve with gravy, mushroom sauce or onion sauce.

12Serves 12.
