- 4 large potatoes, bolted and mashed
- 1 (410 g) can mixed vegetables, drained
- 3 ml Mexican seasoning (half teaspoon)
- 6 -8 eggs, beaten lightly
- 4 slices bacon, chopped
- 1 banana, finely sliced
Directions

1Preheat oven to 180 C (350 F).

2Grease an ovenproof dish or three quarter loaf tin.

3Mix all the ingredients together.

4Pour into the greased oven dish or tin.

5Bake in the oven for 20-25 minutes .

6Serve hot or cold with a crisp salad.
