- 12 large potatoes, boiled and mashed
- 1/2 loaf white bread, cubed
- 1/2 bunch celery, diced
- 4 onions, diced
- 1/2 c. parsley, minced
- 1 Tbsp. salt
- 1/2 lb. butter or oleo
- 2 c. warm milk
- 4 eggs
Directions

1Melt 1/4 pound butter in each of 2 skillets.

2In one, brown the bread cubes until crisp.

3In the other, stir-fry onions and celery until soft and translucent.

4Mash the potatoes, adding the milk, eggs, salt and parsley.

5Fold in the celery and onion mixture and the bread cubes carefully so the cubes remain whole. Pour into a large baking dish and bake at 350° for 1/2 hour.
