  • 12 large potatoes, boiled and mashed
  • 1/2 loaf white bread, cubed
  • 1/2 bunch celery, diced
  • 4 onions, diced
  • 1/2 c. parsley, minced
  • 1 Tbsp. salt
  • 1/2 lb. butter or oleo
  • 2 c. warm milk
  • 4 eggs

Directions

    Melt 1/4 pound butter in each of 2 skillets.

    In one, brown the bread cubes until crisp.

    In the other, stir-fry onions and celery until soft and translucent.
  4. 4
    Mash the potatoes, adding the milk, eggs, salt and parsley.

    Fold in the celery and onion mixture and the bread cubes carefully so the cubes remain whole. Pour into a large baking dish and bake at 350° for 1/2 hour.
