  • 2 medium onions, minced
  • 2 cloves garlic, minced
  • 4 Tbsp. butter
  • 2 eggs, beaten
  • 2 c. grated potatoes
  • 1/2 c. flour
  • 1/2 tsp. baking powder
  • salt and pepper (freshly ground) to taste

Directions

    Saute onions and garlic in butter until browned.

    Mix eggs with potatoes; sift together flour, baking powder and salt and add to potatoes and eggs.

    Stir in the onions and the butter in which they were cooked.

    Blend well.

    Pour into a well-greased one-quart casserole dish and bake in a preheated 350° oven for about one hour.

    Edges of kugel should be brown and crisp.

    Makes 6 servings.
