  • 8 md. red potatoes, cooked
  • 10 pieces asparagus, cut 1 inch pieces
  • 1 cup spinach, tight-packed, wash&dried
  • 1 md. onion, coarsely chopped
  • 1/2 lb. mushrooms, sliced

Directions

    Chop the potatoes into large chunks.

    Combine with onion in a large nonstick fry pan.

    Cook over medium heat for 5 minutes, stirring frequently.

    Add mushrooms and asparagus.

    Cook, stirring frequently, for another 10 minutes.

    Add the spinach.

    Cook, stirring just until spinach wilts.

    Serve with a favorite sauce.
