- 4 Tbsp. butter
- mashed potatoes (made from 4 large, fresh, cooked potatoes)
- 1 1/4 c. flour
- 2 eggs, lightly beaten
- 2 Tbsp. chopped parsley
- 1/2 c. finely chopped pimiento
- 1 tsp. salt
- freshly ground pepper
- 1 1/2 to 2 qt. vegetable oil
Directions

1Heat the butter in a heavy saucepan and add the potatoes and 1 cup of flour.

2Stir constantly over moderate heat for about 5 minutes.

3Add the eggs and cook for 5 more minutes, continuing to stir.

4Remove from the heat and stir in the parsley, pimiento, salt and pepper.

5Taste for seasoning.

6With 2 teaspoons, shape the mixture into 36 balls.

7Dust each one lightly with the remaining flour.
