Eggnog Pound Cake

- 1 cup butter or margarine, soft
- 1/2 cup vegetable shortening
- 3 cups sugar
- 6 large eggs
- 3 cups flour, all-purpose
- 1 cup eggnog
- 1 cup coconut flaked
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
Directions

1Cream butter and shortening.

2Gradually add sugar, beating well at medium speed of an electric mixer.

3Add eggs, one at a time, beating well after each addition.

4Add flour to creamed mexture alternately with eggnog, beginning and ending with flour.

5Mix just until blended after each addition.

6Stir in coconut and flavorings.

7Pour batter into a greased and floured 10 inch tube pan and bake at 325F (160C) for 1 hour and 30 minutes or until a wooden pick inserted in center of cake comes out clean.

8Cool in pan 10 minutes; remove from pan and cool completely on a wire rack.
