Potato Omelet

- 1/2 c. butter or margarine
- 3 medium potatoes, peeled and sliced thin
- 1 medium onion, chopped
- salt and pepper to taste
- juice of 1 lemon
- 2 medium tomatoes, sliced
- 6 eggs
- 1/4 tsp. salt
Directions

1Heat butter in a large skillet.

2Add potatoes, a few at a time.

3Cook until browned on both sides and tender.

4Remove from skillet. Season with salt and pepper. Set aside.

5Add onion to skillet and cook until tender.

6Remove onion from skillet with slotted spoon.

7Place in small bowl. Sprinkle with lemon juice. Return potatoes to skillet. Cover with tomatoes and onion. Cover skillet and cook over low heat 8 to 10 minutes.

8Beat eggs and salt in a small bowl.

9Pour over mixture in skillet. Cover and continue cooking until eggs are set. Cut into wedges to serve.
