- 2 lb. potatoes (about 6 medium)
- 1 egg
- 1/3 c. finely chopped onion
- 3 Tbsp. flour
- 1 tsp. salt
- oil
Directions

1Wash potatoes; pare thinly and remove eyes.

2Shred enough potatoes to measure 4 cups.

3Drain well.

4In small mixing bowl, beat egg until thick and lemon colored.

5Mix in potatoes, onion, flour and salt.

6Brush skillet lightly with oil.

7Heat skillet over low heat.

8Shape potato mixture into 8 patties; place into skillet.

9Cook over medium heat, turning once, about 5 minutes or until golden brown.
