  • 2 lb. potatoes (about 6 medium)
  • 1 egg
  • 1/3 c. finely chopped onion
  • 3 Tbsp. flour
  • 1 tsp. salt
  • oil

    Wash potatoes; pare thinly and remove eyes.

    Shred enough potatoes to measure 4 cups.

    Drain well.

    In small mixing bowl, beat egg until thick and lemon colored.

    Mix in potatoes, onion, flour and salt.

    Brush skillet lightly with oil.

    Heat skillet over low heat.

    Shape potato mixture into 8 patties; place into skillet.

    Cook over medium heat, turning once, about 5 minutes or until golden brown.
