Potato Pancakes

  • 2 large potatoes, coarsely grated
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 heaping Tbsp. matzo meal or flour
  • pinch of baking powder
  • 1 small onion, finely grated
  • nutmeg or ginger (optional)
  • oil for frying

Directions

    Squeeze grated potatoes with your hands to remove as much liquid as possible.

    Stir remaining ingredients into drained potatoes.

    Heat oil (enough for 1/2-inch depth) in a frying pan. Spoon potato mixture by large tablespoons into oil and flatten each pancake with back of spatula.

    Fry until golden, then turn and fry on other side.

    Drain on paper towels and serve hot, with applesauce or sour cream.
