  • 4 medium white potatoes, pared and grated
  • 1/4 c. finely chopped onion
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. milk
  • 1 beaten egg
  • 1/2 tsp. salt
  • 1/4 c. Crisco shortening

Directions

    Place grated potatoes on paper towel and squeeze out moisture. Place potatoes in a mixing bowl.

    Add onion, flour, milk, egg and salt.

    Mix well.

    Melt Crisco in a 10-inch skillet.

    Put 2 tablespoons of mixture for each pancake.

    Flatten with spatula. Cook each pancake 5 minutes on each side.

    Garnish with applesauce or sour cream.
