- 4 medium white potatoes, pared and grated
- 1/4 c. finely chopped onion
- 1 Tbsp. all-purpose flour
- 1 Tbsp. milk
- 1 beaten egg
- 1/2 tsp. salt
- 1/4 c. Crisco shortening
Directions

1Place grated potatoes on paper towel and squeeze out moisture. Place potatoes in a mixing bowl.

2Add onion, flour, milk, egg and salt.

3Mix well.

4Melt Crisco in a 10-inch skillet.

5Put 2 tablespoons of mixture for each pancake.

6Flatten with spatula. Cook each pancake 5 minutes on each side.

7Garnish with applesauce or sour cream.
