Potato Pudding

Ingredients

  • 6 large potatoes
  • 1 small onion
  • 3 eggs
  • 1 c. hot milk
  • 6 Tbsp. butter
  • 1 1/2 tsp. salt
  • 1/4 c. minced parsley
  • 1/2 tsp. baking powder (add if not served immediately)

Directions

    Peel potatoes.

    Place in cold water until ready to grate.

    Dry potatoes and grate.

    Grate onion and add to potatoes.

    Stir in well beaten eggs, hot milk, melted butter and salt.

    Pour into well buttered 6 x 10-inch baking dish.

    Sprinkle parsley over top. Bake at 350° for 1 hour and 15 minutes until golden brown. Serves 8 to 10.
