Potato Refrigerator Rolls

Ingredients
- 1 1/2 c. warm water (not hot)
- 1 pkg. active dry yeast
- 2/3 c. sugar
- 1 1/2 tsp. salt
- 2/3 c. soft shortening
- 2 eggs, beaten
- 1 c. mashed potatoes
- 7 to 7 1/2 c. flour
Directions

1In bowl, dissolve yeast in water.

2Stir in sugar, salt, shortening, eggs and potatoes.

3Measure flour and mix with fork. Turn onto floured surface.

4Knead until smooth and elastic. Grease bowl and place in refrigerator.

5About 2 hours before baking, shape dough into rolls.

6Cover and let rise until double in size, about 1 1/2 to 2 hours.

7Heat oven to 400° and bake 12 to 15 minutes.

8Makes 4 dozen medium rolls.
