Ingredients
- 1 pkg. active dry yeast
- 1/4 c. water
- 1/2 c. hot mashed potatoes
- 1/4 c. shortening
- 1/4 c. sugar
- 1 1/2 tsp. salt
- 1 c. milk, scalded
- 1 egg
- 4 to 4 1/2 c. sifted all-purpose flour
Directions

1Soften active dry yeast in warm water.

2Combine potatoes, shortening, sugar, salt and hot milk.

3Cool to lukewarm.

4Add softened yeast and egg.

5Stir in 2 cups of the flour; beat well. Stir in remaining flour (or enough to make a soft dough).

6Knead on lightly floured surface until smooth and elastic (6 to 8 minutes).

7Cover; let double (1 hour) in a warm place.

8Punch down.

9Shape in a ball, cover and let rise 10 minutes.

10Make into rolls and place on a greased cookie sheet.

11Let rise 1 hour.

12Bake at 400° for 10 to 12 minutes.
