  • 1 cake compressed yeast
  • 1 c. lukewarm water
  • 3/4 c. butter
  • 1 c. mashed potatoes
  • 1/2 c. sugar
  • 3 eggs
  • 3/4 tsp. salt
  • 1 c. milk
  • 7 c. flour

Directions

    Mix butter, potatoes, sugar and salt. Add warm milk. Add yeast, which has been soaked in lukewarm water.

    Add beaten eggs and 1 cup flour. Beat well. Add remainder of flour and knead well. Let rise.

    Work down and let rise again. Form into rolls as for Parker House rolls. When light, bake at 400° for 15 to 20 minutes.
