Potato Rolls

Ingredients

  • 2 c. warm water
  • 2 pkg. yeast
  • 3/4 c. shortening
  • 1 Tbsp. salt
  • 2 eggs
  • 1 c. hot mashed potatoes
  • 7 to 8 c. flour

Directions

    Dissolve yeast in the warm water, then add and mix shortening, salt, eggs and mashed potatoes.

    Add 2 cups flour at a time.

    Turn into greased bowl until double in size.

    Punch down.

    Make rolls. Let rise 1 to 2 hours.

    Bake at 450° until brown.

    Brush tops with butter.

    Serve.
