Potato Rolls

Ingredients

  • 1/2 c. warm mashed potatoes
  • 1 1/2 c. warm water
  • 1/2 c. oleo
  • 6 1/2 c. flour
  • 2 pkg. yeast
  • 1/2 c. sugar
  • 1 tsp. salt
  • 2 eggs

Directions

    Sprinkle yeast in water.

    Add sugar and salt.

    Let bubble.

    Add eggs and 3 cups flour.

    Mix at high speed with mixer.

    Add 2 cups more flour.

    Use wooden spoon to mix rest of flour.

    Let rise in icebox, covered, for 2 hours.

    Remove and punch down.

    This may be kept in icebox for 3 or 4 days.

    Just take out as much as you need. Shape into rolls and let rise for 2 hours.

    Bake at 350° in oven until done.
