  • 12 Idaho potatoes
  • 1 c. chopped onion
  • 1/2 c. parsley
  • 1 pkg. Ritz cheese crackers, crumbled
  • salt and pepper to taste
  • 1 stick butter
  • 2 eggs
  • 1 lb. sharp cheese

Directions

    Bake the potatoes.

    Peel and add butter, onion, eggs, parsley, cheese and seasonings.

    Shape into small (2 or 3-inches) rolls. Roll in cheese cracker crumbs.

    Bake at 325° for 20 to 30 minutes. Makes 25 to 30 rolls.

    Serve while
