Potato Rolls

Ingredients
- 1 pkg. yeast
- 1/2 c. lukewarm water
- 2/3 c. shortening
- 1/2 c. granulated sugar
- 1 tsp. salt
- 1 c. mashed potatoes
- 1 c. scalded milk
- 2 eggs, well beaten
- 6 to 7 c. all-purpose flour
Directions

1Dissolve yeast in lukewarm water.

2Add shortening, sugar and salt.

3Add mashed potatoes to scalded milk.

4When cooled, add the yeast.

5Mix thoroughly and add eggs.

6Stir in enough flour to make a stiff dough.

7Put in refrigerator for a couple of hours or overnight.

8When ready to make rolls, punch down dough, form into rolls and let rise 2 1/2 hours.

9Bake at 400° for 10 to 12 minutes or until golden brown.

10Makes 4 to 5 dozen.
