Potato Salad

Ingredients

  • 6 medium red potatoes
  • 1 large onion, chopped
  • 8 medium hard-boiled eggs
  • 3/4 c. sweet pickles, chopped
  • 1 Tbsp. mustard
  • 5 Tbsp. Hellmann's mayonnaise
  • salt and pepper to taste

Directions

    Boil potatoes until tender.

    Cut into wedges and place in large bowl.

    Do not peel.

    Cut bad spots off of potatoes.
  5. 5
    Add hard-boiled eggs after they cool and are sliced.

    Mix onion and pickles and add to potatoes and eggs.

    Stir in mustard and mayonnaise.

    Add more mayonnaise if needed.

    Salt and pepper to taste.

    Place in refrigerator for at least 1 hour before serving.
