Ingredients

  • 1 c. mayonnaise
  • 3 Tbsp. sweet pickle juice
  • 1/2 tsp. sugar
  • dash of black pepper
  • 8 small sweet pickles, chopped
  • 1 medium onion, chopped finely
  • 1 carrot, chopped finely
  • 3 Tbsp. vinegar or lemon juice
  • 1/2 tsp. salt
  • 1/8 tsp. paprika
  • 6 medium baking potatoes
  • 6 hard-boiled eggs, chopped
  • 1 stalk celery, chopped finely
  • 1 green pepper, chopped (optional)

Directions

    Combine first 7 ingredients well in small bowl.

    Cook potatoes in boiling water for 30 minutes or until tender.

    Drain, cool, peel and chop potatoes.

    Add remaining ingredients; add dressing and toss gently.

    Chill in covered bowl.

    Serves 8 to 10.
