Ingredients
- 2 2/3 lbs potatoes, peeled
- 4 tbsp white wine vinegar
- 6 tbsp olive oil
- 2 None onions, peeled and diced
- 2/3 cups fresh chives, chopped
- 2/3 cup fresh flat-leaf parsley, finely chopped
- 1 3/4 lbs tomatoes, each cut into 8 wedges
Directions

1Cook the potatoes in boiling salted water for 20 mins. Drain and rinse with cold water. Allow to cool, then slice.

2Place the vinegar in a small bowl and season with salt and white pepper. Gradually whisk in the oil. Stir in the onions, chives and parsley.

3Mix the potatoes and tomatoes in a bowl. Add the dressing and toss. Allow to stand for 30 mins before serving.
