Potato Salad

Ingredients

  • 2 2/3 lbs potatoes, peeled
  • 4 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 2 None onions, peeled and diced
  • 2/3 cups fresh chives, chopped
  • 2/3 cup fresh flat-leaf parsley, finely chopped
  • 1 3/4 lbs tomatoes, each cut into 8 wedges

Directions

    Cook the potatoes in boiling salted water for 20 mins. Drain and rinse with cold water. Allow to cool, then slice.

    Place the vinegar in a small bowl and season with salt and white pepper. Gradually whisk in the oil. Stir in the onions, chives and parsley.

    Mix the potatoes and tomatoes in a bowl. Add the dressing and toss. Allow to stand for 30 mins before serving.
