- 2 c. potatoes, diced and cooked
- 1 medium onion, diced
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 eggs, beaten
Directions

1Fry bacon until crisp; drain off all but 3 tablespoons fat. Cook and stir potatoes, onion, salt and pepper in fat until browned.

2Pour eggs in skillet.

3Cook uncovered until eggs are thickened.
