- 3 medium baking potatoes
- 1 c. shredded Cheddar cheese
- 6 slices bacon, cooked and crumbled
- oil for deep frying
- sour cream
Directions

1Scrub potatoes thoroughly and rub skins with oil.

2Bake at 400° for 1 hour or until done.

3Cool potatoes.

4Cut in half lengthwise. Carefully scoop out pulp, leaving 1/4 to 1/8-inch shell.

5Pulp may be reserved for mashed potatoes.

6Deep fry shells in oil for 2 minutes until light brown.

7Drain on paper towels.

8Place skins on baking sheet; sprinkle with cheese and bacon.

9Place under broiler until cheese melts.

10Serve with sour cream.
