- 4 baking potatoes
- oil for frying
- 4 slices bacon
- 2 Tbsp. chopped green onion
- 2/3 c. shredded Cheddar cheese
- 1/3 c. sour cream
- 1 Tbsp. mustard
Directions

1Scrub potatoes; pat dry.

2Prick with a fork.

3Bake at 400° for 50 minutes or microwave until done.

4Cool until you can handle with hands.

5Cut lengthwise into wedges.

6Cut center away leaving 1/4 inch.

7Prepare topping.

8Fry skins in oil until crisp.

9Divide topping between skins.

10Sprinkle with cream cheese and bacon on top.

11Bake for 5 minutes at 400°.

12Serve immediately.
