- 4 small to medium potatoes
- 4 slices Cheddar cheese
- bacon bits
- sour cream
- chives

1Preheat oven to 350°.

2Bake potatoes.

3Cut potatoes in half and scoop out potato, leaving 1/4-inch potato in shell.

4Deep fry potato skins in fat that has been preheated to 350° and fry until lightly crisp.

5Remove from fat; drain.

6Add 1/2 slice Cheddar cheese to each potato half and sprinkle bacon bits over each.

7Put back in oven until cheese melts.

8Serve hot with sour cream and chives.
