  • 4 medium baking potatoes, scrubbed and pierced
  • 1/4 c. shredded cooked chicken
  • 1 c. (4 oz.) shredded Mozzarella cheese
  • 1 Tbsp. capers, drained and chopped
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. nonfat milk
  • salt (optional)
  • freshly ground pepper

Directions

    Preheat oven to 375°.

    Bake potatoes 1 hour or until fork-tender.

    Cool until potatoes can be handled.

    Cut in half lengthwise.

    Scoop out pulp leaving 1/4 to 1/2-inch shell. Position oven rack 4 to 6 inches from heat source.
