- 1/4 c. shredded cooked chicken
- 1 c. (4 oz.) shredded Mozzarella cheese
- 1 Tbsp. capers, drained and chopped
- 1 Tbsp. chopped parsley
- 1 Tbsp. nonfat milk
- salt (optional)
- freshly ground pepper
Directions

1Preheat oven to 375°.

2Bake potatoes 1 hour or until fork-tender.

3Cool until potatoes can be handled.

4Cut in half lengthwise.

5Scoop out pulp leaving 1/4 to 1/2-inch shell. Position oven rack 4 to 6 inches from heat source.
