- Cheddar cheese, shredded

Directions

1Bake several potatoes in oven or microwave until soft when pressed.

2Let cool about 30 minutes.

3Slice in half lengthwise. Scoop out center of potato, leaving about 1/2-inch or less potato on skin.

4Drop skins in deep fat fryer and fry until crisp or bake in oven until crisp.

5Place on broiler rack in oven, topped with shredded cheese and bacon bits.

6(Fresh cooked bacon is much better.)

7Broil until cheese melts.

8Remove and top with more bacon bits and sour cream or your choice of toppings (green onions, chopped).

9If you don't want your skins crisp, use the oven method instead of deep frying; also cuts down on calories.
