- 1/2 c. margarine or butter, melted
- 2 c. shredded Cheddar or Monterey Jack cheese (8 oz.)
- garlic or seasoned salt (optional)
- salsa
- sliced green onion
Directions

1Prick potatoes with a fork.

2Bake in a 425° oven for forty to fifty minutes or until tender.

3Cut into quarters.

4Scoop out the insides (reserve for another use), leaving 1/2-inch thick shells. Brush both sides of potato skins with margarine.
