- 4 lb. potatoes
- 1 onion, finely grated
- 3/4 c. milk
- 1 stick butter
- 8 oz. cream cheese, soft
- 2 eggs
- salt and pepper to taste
- 1 c. French-fried onion rings
Directions

1Peel potatoes, cut into pieces and boil in water until soft (25 to 30 minutes).

2Drain potatoes well.

3Add onion, milk, butter and cheese.

4Mix well with electric mixer.

5Add eggs, beat until smooth.

6Add salt and pepper.

7Place in baking dish, top with onion rings.

8Bake at 350° for 35 minutes.
