- 1 stick butter or margarine
- 2 stalks celery (and greens), chopped
- 1 onion, chopped
- 2 cans beef consomme soup
- 1 beef bouillon cube
- 5 medium potatoes, cubed
- 1 tsp. parsley flakes
- 1 large container sour cream
- salt and pepper to taste
Directions

1Melt butter in 2-quart saucepan. Add celery and onion.

2Cook until tender and transparent. Add the consomme soup, beef bouillon cube, potatoes and parsley. Cook until potatoes are done.

3Let mixture cool. Remove a small amount of liquid.

4Mix with sour cream in a bowl until smooth, then add to soup mixture.

5Be sure soup is cool before mixing with sour cream.
