Ingredients
- 1 c. peeled, cubed potatoes
- 1/2 c. chopped onion
- 1 (14 1/2 oz.) can ready to serve chicken broth
- 1 c. milk
- 1/8 to 1/4 tsp. salt
- 1/4 tsp. dried thyme
- 1/4 tsp. pepper
- 1 tsp. butter
- 3 to 4 Tbsp. instant mashed potato flakes
- thyme sprigs (garnish)
Directions

1Combine first 3 ingredients in a large pan.

2Bring to boil; cover and reduce heat.

3Simmer 15 minutes or until potatoes are tender.

4Add milk and next 4 ingredients.

5Gradually add potato flakes; cook over medium heat, stirring constantly until thoroughly heated.

6Garnish with thyme sprigs, if desired, and serve immediately.

7Makes 3 1/2 cups.
