- 5 lb Potatoes, cut-up
- onion, chopped
- 1 can cream of celery soup
- 1 lb Velveeta cheese
Directions

1Peel and cut potatoes, add chopped onion.

2Bring to a boil in water that covers potatoes good.

3Reduce heat and simmer until potatoes are very tender.

4Add soup and cheese to potato mixture. (Do not drain potatoes.)

5Mix well and cook until cheese is melted. Serve with bacon bits and chopped green onions added to each bowl. Crackers or cornbread are a must with this soup.
