- 4 or 5 carrots
- 1 medium onion
- 4 or 5 stalks celery
- 8 to 10 potatoes
- parsley
- 1 stick butter or margarine
- 1 can evaporated milk
Directions

1Dice and cover carrots, onion and celery with just enough water to cover them and simmer while peeling potatoes.

2Peel and dice potatoes. Add to carrots, onion and celery.

3Add enough water just to cover vegetables.

4Cook until done.

5Turn off the heat and add margarine, evaporated milk and sprinkle in parsley.

6Make sure soup is off the heat because evaporated milk will curdle.
