- 6 medium potatoes, peeled and sliced
- 2 carrots, diced
- 3 celery stalks, diced
- 2 qt. water
- 1 onion, chopped
- 6 Tbsp. margarine
- 6 Tbsp. plain flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. milk
Directions

1In large kettle, cook potatoes, carrots and celery in water until tender (about 20 minutes).

2Drain, reserving liquid and setting vegetables aside.

3In same kettle, saute onion until soft in margarine.

4Stir in flour, salt and pepper.

5Gradually add milk, stirring constantly until thickened.

6Gently stir in cooked vegetables.

7Add 1 cup or more of reserved liquid from vegetables until soup is of desired consistency.
