- 4 large potatoes
- 1 medium onion
- 1 stalk celery
- 2 Tbsp. margarine
- 1/4 tsp. salt
- dash of pepper
- pinch of ground allspice
- 1/2 tsp. parsley
- 1 (12 oz.) can evaporated milk (skim)
Directions

1Melt margarine in medium saucepan.

2Chop celery and onion finely and saute in margarine.

3Peel and dice potatoes into 1/2 to 1-inch cubes; add to pan.

4Add spices and just barely cover with water.

5Cover and boil for 15 to 20 minutes.

6Add canned milk, reduce heat and simmer 10 minutes, stirring occasionally to prevent scorching.
