- 1/2 c. chopped onion
- 2 Tbsp. butter or margarine
- 1 1/2 c. peeled, cubed potatoes
- 1 c. water
- 2 cans cream of chicken soup
- 1 c. milk
- 1/2 tsp. salt
- dried parsley
- 3-4 oz. cream cheese (cut up)
Directions

1Saute onion in butter in a saucepan.

2Add potatoes and water. Cook covered until potatoes are tender.

3Add soup, milk, salt, parsley and cream cheese.

4Heat thoroughly.

5Top with sharp Cheddar cheese, if desired.
