Potato Soup

Ingredients

  • 6 to 8 potatoes, peeled and diced
  • 3 Tbsp. butter
  • 2 small carrots, diced
  • 1/4 c. onions, finely chopped
  • 2 Tbsp. flour
  • 1 qt. milk
  • 2 Tbsp. parsley, chopped fine
  • 1 Tbsp. salt
  • 1 chicken bouillon cube

Directions

    Cook potatoes in boiling water and salt until done.

    Melt butter in 3-quart kettle.
  3. 3
    Add carrots and onions; cover and cook until tender.

    Remove from heat.

    Blend in flour; stir in milk. Add 1/2 of potatoes.

    Mash other 1/2 potatoes.

    Add all ingredients; heat until steaming hot.

    (Grated celery may be added, if you wish.)
