Ingredients
- 6 to 8 potatoes, peeled and diced
- 3 Tbsp. butter
- 2 small carrots, diced
- 1/4 c. onions, finely chopped
- 2 Tbsp. flour
- 1 qt. milk
- 2 Tbsp. parsley, chopped fine
- 1 Tbsp. salt
- 1 chicken bouillon cube
Directions

1Cook potatoes in boiling water and salt until done.

2Melt butter in 3-quart kettle.

3Add carrots and onions; cover and cook until tender.

4Remove from heat.

5Blend in flour; stir in milk. Add 1/2 of potatoes.

6Mash other 1/2 potatoes.

7Add all ingredients; heat until steaming hot.

8(Grated celery may be added, if you wish.)
