- 1/2 c. salad oil
- 1 c. chopped onion
- 3 c. sliced, raw potatoes
- 1/2 c. water
- 2 tsp. salt
- 1/4 tsp. pepper
- 3 c. milk
- 3 Tbsp. chopped parsley
Directions

1Saute onion in oil over low heat, stirring occasionally, for about 12 to 15 minutes, until tender, but not brown.

2Add potatoes and water; cover and cook slowly until tender, about 20 minutes. Force through sieve.

3Add seasonings and milk; heat thoroughly. Just before serving, add chopped parsley.

4Makes 4 to 6 servings.
