Potato Soup

Ingredients

  • 2 Tbsp. butter
  • 3/4 c. chopped onion
  • 2 Tbsp. flour
  • 5 c. hot chicken stock
  • 1 c. sliced carrots
  • 3/4 c. sliced celery
  • 4 c. peeled and diced potatoes
  • 1/4 c. chopped parsley
  • 1 c. heavy cream or half and half
  • 1 tsp. seasoned salt or to taste
  • 1/4 tsp. pepper or to taste

Directions

    Melt butter in a large soup kettle.

    Add onion and saute until soft.

    Add flour and cook, stirring, for 3 or 4 minutes.

    Remove from heat and slowly stir in hot chicken stock.

    Add and simmer gently for about 10 minutes.

    Add potatoes and simmer until vegetables are tender, about 20 minutes.

    Add parsley, seasoned salt and pepper.

    Stir in cream or half and half.

    Makes about 8 cups or 6 to 8 servings.
