Ingredients
- 2 Tbsp. butter
- 3/4 c. chopped onion
- 2 Tbsp. flour
- 5 c. hot chicken stock
- 1 c. sliced carrots
- 3/4 c. sliced celery
- 4 c. peeled and diced potatoes
- 1/4 c. chopped parsley
- 1 c. heavy cream or half and half
- 1 tsp. seasoned salt or to taste
- 1/4 tsp. pepper or to taste
Directions

1Melt butter in a large soup kettle.

2Add onion and saute until soft.

3Add flour and cook, stirring, for 3 or 4 minutes.

4Remove from heat and slowly stir in hot chicken stock.

5Add and simmer gently for about 10 minutes.

6Add potatoes and simmer until vegetables are tender, about 20 minutes.

7Add parsley, seasoned salt and pepper.

8Stir in cream or half and half.

9Makes about 8 cups or 6 to 8 servings.
