- 10 medium to large potatoes, peeled and diced to bite-size
- 1 medium onion, chopped coarse
- 1 stalk celery, chopped medium
- 1/2 tsp. pepper
- 1/2 tsp. salt (if desired)
- 1/2 tsp. garlic powder
- 1 1/2 tsp. cornstarch
Directions

1Place potatoes in large saucepan; add cold water until just covered.

2Add onion and celery.

3Boil until potatoes are just tender.

4Add garlic and pepper; boil until almost mushy.

5Place cornstarch in a cup; add 1/2 cup very hot water.

6Stir well.

7Pour cornstarch mixture slowly into potato soup.

8Stir constantly until thickened.
