Potato Soup

Ingredients

  • 1 onion
  • 2 Tbsp. bacon grease
  • 2 to 3 carrots
  • 8 potatoes
  • 1 Tbsp. marjoram
  • instant potatoes (as required)
  • 1 bay leaf
  • salt
  • meat (leftover roast, Polish sausage or 4 to 5 hot dogs)

Directions

    Chop onion and brown in bacon grease.

    Add peeled and diced potatoes.

    Peel and slice carrots and add.

    Cover in large pot with water and let boil with bay leaf, about 30 minutes.

    Add meat and instant potatoes until broth thickens.

    Bring to boil; add marjoram and let simmer for 5 minutes.

    Salt to taste.

    This soup tastes good with rye bread or corn bread.
