Potato Soup

Ingredients

  • 6 to 8 potatoes, diced
  • 1 onion, diced
  • water to cover
  • 1 qt. milk *
  • 1 Tbsp. chopped parsley
  • salt and pepper to taste
  • 1 Tbsp. butter
  • 1 egg, lightly beaten
  • flour and water if needed to thicken
  • 1 hard-boiled egg
  • paprika

Directions

    Pare and dice potatoes, add onion, cover with water and boil until good and soft, but not mushy.

    Drain, add milk, parsley, salt and pepper to taste and butter.

    Beat egg, add some of the soup to it and pour mixture into pot.

    This soup should be quite thick.

    If it isn't, blend a couple of tablespoons flour with equal amounts of water and add to pot.

    Cook a few minutes to blend flavors.

    Cut up hard-boiled egg and distribute pieces in soup plates.

    Pour soup over egg, sprinkle with paprika and serve.

    Serves 4.
