Ingredients

  • 1/4 to 1/2 c. butter or oleo
  • 4 Tbsp. flour
  • 3 c. chicken broth
  • 2 c. milk
  • 1 onion, chopped fine
  • 1 grated carrot
  • 2 to 3 stalks celery, diced
  • 1/4 to 1/2 c. parsley
  • 1/3 c. diced potatoes, cooked

Directions

    Melt butter over low heat.

    Stir in flour.

    Stir in 1/2 cup chicken broth and as it thickens, add remaining chicken broth and milk.

    Cook to desired consistency and add salt and pepper.
